Swiss Apple Cake


2 large cooking apples
2 ½ fl oz water1 egg, separated
½ grated orange rind
4 oz Self Raising flour
½ teaspoon vanilla essence
2 tablespoon sultanas
½ teaspoon mixed spice
Pinch salt
Juice of ½ orange
1 tablespoon oil


Heat oven Gas 6, 400°F

Put apples, sultanas, water and spice into a saucepan and stew the fruit

Whisk egg white until stiff

Add salt, egg yolk, orange juice, and orange rind and beat well

Add milk, oil, vanilla essence and sieve in flour

Beat again

Pour into a greased tin

Bake for 30 – 35 mins.
