Orange Spritz Cookies


1 cup of softened butter
1 cup of granulated sugar
1 egg yolk
2 tablespoons of orange juice
2 ¼ cups of all-purpose flour
1 tablespoon of orange peel (finely chopped)
¼ cup of finelt chopped pecans (optional)


Preheat the oven to 350 degrees Fahrenheit.  Cream the butter and sugar in a mixing bowl.  Beat the egg yolk together with the orange juice.  Mix in flour, orange peel, and pecans.  Mix until combined.  Remember that the dough must be soft but not sticky.

Then, place the dough into the cookie press.  Use shapes whatever you desired.  Press the cookies into the un-greased cookie sheet.  Bake for 10 to 12 minutes or until the edges are lightly brown.  Cool for 2 minutes and remove from the cookie sheet.
