Cinnamon Cookies


1 cup of butter
½ cup of confectioner’s sugar
½ teaspoon of ground cinnamon
¼ teaspoon of salt
1 teaspoon of vanilla extract
1 and ½ cup of all-purpose flour
1 cup of confectioner’s sugar
1 teaspoon of ground cinnamon


Preheat the oven to 350 degree Fahrenheit.  Grease the cookie sheets.  Cream the ½ cup confectioner’s sugar and butter together until smooth.  Stir in vanilla and combine flour, salt, and ½ teaspoon of cinnamon.  Stir into the creamed mixture to form stiff dough.  Shape the dough into 1 inch balls.  Blend together 1 cup of confectioner’s sugar and 1 teaspoon of cinnamon.  Then, roll the balls in cinnamon mixture.

Bake for about 15 to 20 minutes or until nicely brown.  Cook the cookie on wire racks, and serve when cool.
