1 3/4 C sugar plus 1 C sugar
2 C flour
1 tsp. salt
1 C nuts, chopped and divided
1 C canola oil
1 tsp. vanilla extract
1 tsp. baking soda
3 TBSP cinnamon plus 2 tsp. cinnamon
3 C apples (your favorite type), chopped
1/4 C butter, melted
Place the 1 3/4 C sugar in a large mixing bowl. Add the eggs and mix to combine. Stir in the canola oil and extract until well blended.
Stir in the flour until completely moistened. Add the baking soda, salt and cinnamon and continue stirring until completely incorporated. Fold in the apples and 1/2 C of the chopped nuts.
Spray a 9 X 13 in pan with a non stick cooking spray. Heat the oven temperature to 375 degrees.
Place 1 C of sugar into a mixing bowl.Toss together with the 2 tsp cinnamon and 1/2 C chopped nuts. Pour in the butter and mix until ingredients is well combined. Pour mixture over the entire top of the cake batter. Bake 40 minutes or until toothpick inserted in the center comes out clean.
Allow to cool before cutting into squares.
Instead of using the cinnamon and nuts in the topping add a few red hot candies to the mix.
