Vegetable Bean Soup

1/2 Lb Assorted Beans (Kidney, Pinto, etc)
1 Vidalia Onion – Diced
1/4 Cup Low Fat Yogurt
1/8 Cup Chopped Cilantro
2 Cups Assorted Greens – Chopped
2 Cloves Garlic – Crushed
1 Tablespoons Oil
1 Tablespoons Cider Vinegar
1/2 Teaspoon Salt
1 Cups Diced Or Stewed Tomatoes
Pinch Of Black Pepper

Vegetable Bean Soup Instructions:

Soak beans overnight. Drain in the morning.

Add beans to onion, garlic, and water in a saucepan.

Add water & simmer.

Add remaining ingredients.

Continue to simmer until beans are soft.

Your vegetable bean soup is then ready to serve.
