Mushroom and Parsley Soup Ingredients:
1 tbsp. butter
1 1/2 c. mushrooms, sliced
1 tbsp. olive oil
2 1/2 c. water
1 medium onion, chopped
2/3 c. milk
2 cloves garlic, minced
4 tbsp. fresh parsley, chopped
Salt and pepper
Mushroom and Parsley Soup Directions:
In a large saucepan, melt the butter. Cook onion and garlic until soft (about 5 minutes).
Add mushrooms and water and bring to a boil. Cook, covered, for about 10 minutes.
Remove pan from heat and add milk and parsley.
